• 400 g Game Farm Quail Medallions
• 240 g Mushrooms, sliced
• 2 Cloves of garlic, roughly chopped
• 1 Medium sized brown onion, diced
• 4 tbsp Sweet paprika
• 400 ml Cream
• 40 ml Vegetable oil
• 40 g Butter
• Salt and pepper to taste
• 4 serves of blanched green beans
1. Heat oil in a frying pan.
2. Season Game Farm Quail Medallions with salt and pepper, place into the pan and cook gently until just cooked, take out and set aside.
3. Add butter to the pan, once butter is melted add onions and garlic, cook for one minute before adding mushrooms.
4. Cook for a further three minutes then add paprika and cream.
5. Simmer until sauce thickens, add Game Farm Quail Medallions heat and serve.
Variation: Serve on a bed of green beans or with fresh salad, rice or soft polenta.
