500ml Prestige veal stock
500ml white wine
60 ml extra virgin olive oil
1 onion – chopped fine
60gm butter
350gm Italian rice
200gm shitake mushrooms – sliced diagonally
1 orange – grated zest
Sea salt
Cracked white pepper
Fresh sage leaves – for garnish
Service note: a classic risotto has no cheese but this addition makes it more flavorsome and richer. Substitute mushrooms for mixed vegetables, spinach or even sliced smoked duck breast.
